@TomRAFC its a japanese carving knife, they have a very long, narrow and thin blade with a bevel on both sides, so it really is perfect for carving areas like the "volute".
I had the immense pleasure of meeting Dermot in his workshop a few weeks ago and seeing what makes his guitars so special. I played a couple of them and I've never played anything better. He's a very charming guy and you can tell that he puts a lot of love and creativity into his guitar making. That extra bit of attention and invention pays off in the amazing sound of the guitars!

i Just bought a Mcilroy AJ25 custom and i have yet to hear a guitar sound as good it is absoutly amazing sound quality and craftmanship
