I actually just did the same thing. I made a Blackberry Porter from a recipe I made with an OG of 1.080 and used two smack packs of 1028 London Ale yeast. Within 5 hours it was already bubbling every minute and i checked it about 15 hours later and the airlock was about to pop off and there was foam everywhere. I'm excited though...it's my first 'big' beer

same kinda thing happened when I brewed a Hefewisen- American style wheat ale. Just started Southern German Weizenbier.

I love the rigged use of a bottling wand. I just had to do something similar with an old racking cane when I had a similar situation. Here's to homebrew inginuity!

My first brew I did a Dunkel. I had no idea what to expect. my daughter and I were asleep on the couch on the 2nd day of fermentation when we heard what sounded liek a bomb going off. I laid her back down onto the couch and went into my basement to find the fermenter lid about 8 feet from the bucket and Dunkelweisen covering my walls and ceiling. I will never use an airlock again.

It ended up tasting great! Roasted and sweet. I lost a little bit of beer due to it being my first experience with a beer that insane... I had to just let it spew onto the patio before I could get the blow-off set-up. It carbonated really well and had an awesome head. It didn't last long. I should've thought ahead and aged a few. Cheers!
