they are contrails. efficient jet engines produce alot of water vapor, more than the original jet fuel in most cases. when this vapor gets blasted out of the back at xxxx mph, it soon meets the frigid air which is the norm at high alt. so, the water vapor condenses into ice crystals which create the cloud likeness (similar to cirrus) if the air is moist the cyrstals will take longer to sublimate = longer trails, if the air is dryer = short or no trail. if very mosit = persistent trails.
