  • Ok, this is to undo the misinformation here:

    Sofrito is NOT a sauce put on food. Sofrito is a cooking base, the first thing to go in the pot to flavor whatever is being cooked. Uncooked and w/o mixing in food, sofrito is actually pretty bitter and unexciting. However once its cooked up with salt and oil and beans, or meat or w/e it gives up its rich aromas from different kinds of pepper, garlic, and 'recao' (i dont know the spice's name in english sorry).

    But it is not a sauce to pour on!

  • i love anthony, but being from puerto rico, this is one of his worst episodes. that guide is a total idiot.

  • The music that is beeing play at 5:10 is not Puerto Rican. It is "Pajaro Campana" a traditional music from Paraguay. I pointed this because we assume that what we are watching and listen to, is entirely from Puerto Rico.

    Culantro is not an alternate spelling of cilantro.

    Answer: Culantro is a completely different plant from cilantro. Although the two are cousins, they look nothing alike and are quite easy to differentiate by appearance.

    Culantro, Eryngium foetidum, has long, serrated leaves and sports a blue flower when permitted to bolt. It is the leaves of culantro that are popular in Caribbean and Asian dishes.
