I've used the Centaur vs battle ships hit and run tactics always used subsystem targeting hit their weapons first then engines then shields. what sucks though is even when you or the other ship has full shields you can still knock out their generator or weapon array.

However, using a defiant class in the last mission kind of guaranteed success. It was too fast, the whole mission is over in a few minutes.
