Here is a pretty neat way to serve sweet potatoes. After roasting they are combined with an herbed compound butter, Vermont maple syrup and some wonderful Virginia peanuts.

  • Does the trick with putting salt on the bottom of the pan to reduce moisture work on sweet potatoes too?

  • It seems to work with baked potatoes - keeps the skin crispy and the inside firm. Simply put a layer of course salt under the potatoes.

  • @OldSchoolSkill nice...tell your cousin to hook me up with some too...those things are like 9 bucks for a small can...
