Home leva as OLY or Casa a Leva need a PRO temper ? Fe-ar with a home made toy tamper also good with good preinfusion....

You are incorrect as how to adjust the shot time. The tamp should never change. The only way you adjust the shot time is by the grind. that is why you only gind what you need for each shot. This is according to the Internationa Acadamy of Scecialty Coffee and SCCA. I am an IASC certified barista.

You are correct, the video is incorrect in this regard. In defense, the video was made over 15 years ago, we have learned a lot in the meantime!

Not to overlook dose, some coffees seem to give more favorable flavors at higher or lower doses. I agree 100% that tamping should be as consistent as possible. Eliminating variables is a wonderful thing.

Agreed. Also, we have found that different machines prefer differing size doses. For example, our La Marzocco works best with an 18 gram double shot. Whereas, 14 grams works best for machines like the Astoria or Rio. Obviously, basket diameter and depth have a lot to do with this.
