I own the games if they are on consoles, but I don't own the arcades.

What software do you use when editing?

I use Pinnacle 12 for editing. You can find it at places like Best Buy for around $70-100. It's fairly easy to learn, but can can be frustrating at times as well.

Sonic CD was the only sega cd game to make the list? If you haven't played Silpeed for it please do! Also mk1 and lethal enforcers had the best ports on the Sega CD.

Soul Caliber for the Dreamcast is, by far, my favorite fighting game. Don't get me wrong. I love Mortal Kombat, Tekken, Street Fighter, Marvel vs. Capcom and Virtua Fighter. But Soul Caliber is the best of them all.
