Good for you. :-) It's much more rewarding to have something delicious rather than your bog-standard choccy bar, which, after tastes cheap and not as nice as we think it does (it's just an addiction thing), particular after the really good quality stuff.
I didn't know about the following facts highlighted in this video:
1) Chocolate shouldn't be kept in the fridge otherwise it's ruined 2) If it's too dark the beans have been overroasted so it's not going to be as nice. 3) Temperature control and mixing means it's treated well and makes it shiny. Very interesting but how many of us will buy really good (expensive) quality chocolate and eat it correctly the way this guy advises?
