This is short series when I try to explain how to can fruit. This year I had a lot of tomatoes and I didn't want them to go bad. I've already gave a lot to my friends and family and still some left over. I've been wanting to learn to can food, so I can be more sustainable and independent hoping some day I can grow my own food.   • Do you ever can your tomatoes using the water-bath method?

  • @MyFreedomChannel I don't use the water-bath method because I don't have a water bath caner. You can do both low and high acid foods in a pressure caner and that's all I have.

    So most of your fruits you can use a water bath caner, but you have to use a pressure caner to can vegetables and meats.

  • That's fine - I was just curious. I deleted my first reply because I didn't pay close attention to yours. You are correct. Although my grandparents used a water-bath method for many years without any problems w/food poisoning, However, it is much safer to use pressure can method for non-acid foods. We never canned our meats - always froze them very well in a deep freezer in special paper; our meats lasted at least one year w/o any problems.
