This recipe is an offshoot of the "Spicy Italian Sausage" recipe from Everyday Dish. We just can't seem to get enough of them! Naturally this has quickly become a favorite in our household. We love it topped with vegan Parmesan (homemade or store-bought) or vegan mozzarella, right before placing it under the broiler.

  • My favorite recipe is in the book Yellow Rose Recipes by Joanna Vaught. The book is published by Herbivore, and can be found on Amazon. Otherwise you can pulse walnuts (or a combo of cashews and walnuts), nutritional yeast and salt in a food processor.

  • Is there a secret to covering up the unsavory wheat gluten taste that is often present in homemade seitan? I've tried all sorts of different spice combos, but can't seem to cover up that gluten taste... which is unfortunate because I'd like to get off real meat completely.
