  • We italians tend to salt the eggplant after slicing them and letting them excrete the excess moisture, this tends to take away the bitterness that eggplants have. Leave them salted for about an hour, then wash out the salt and continue with Dave's recipe.

  • @mrockstar22 Don't have the heat so high. it'll still fry well even on Medium heat and wont be greasy coming out. I had it high today and reduced it, same result in the end. Anyone know how long it should be in, roughly 35 mins or until Cheese is melted?

  • okay so im making this for dinner , and as a skilled cook i have yet to figure out , when frying the eggplant how do i prevent from smoking out my entire house ... its so frustrating when in the dead of winter i have to open all my doors just to release the smoke ..lol its brutal .. and on every video i watch no one else is smoking out the joint .. is it just me ?

  • Don't use Panko...I did it once, never again...it felt grainy in my mouth... gross..I'm Italian, my grand-ma taught me. wish she was still here.......home-made pasta hanging over her chairs....I;ma so sad, missa you grandma
