What is that program called???

Freeform can't do symmetry in real-time? You have to individually clone over everything you want to be symmetrical? That seems like it'd be a pain. :-(

The application is called FreeForm and it's developed by a company in Boston called Sensable technologies. There are various distributors around the world who sell & support it. Try w3 sensable dot com

The software is driven by a pen-liek device on a small armature, called a Phantom.
Glad you like the look of it, the first time people see it "live" is usually a jaw-dropping moment!
