Why did you introduce oxygen to the wort in the fridge?

According th Ed [the Brewer] after adding the Yeast, the oxygen helps get the fermentation off to good start. This batch came out to 6% alcohol.

his method is not very efficient he only got 60% could easily had 75%+ with his equipment and just some better temp/sparge control he would have hit 7.1%

there are two types of fermentation. Aerobic and anaerobic. The first involves the cellular division of the yeast. Once all of the oxygen is gone, yeast will start to eat the sugar. I usually just shake to hell out of my carboys to aerate them, I have seen others connect something to a drill and stir it that way. Eds way is the most ideal way to aerate your wort but can cost a bit. Noticing the Porsche in the garage, im sure he isnt worried about it ;-) Great series on all grain brewing!
