I think I generally agree with you. At least if you live in a big city, or even small city. I don't think there is a pro knife sharpener where I am moving to. So I am glad I do know how to do it, instead of mailing it away...
That would depend on what angle the knife is originally forged. If you have a good knife, definitely not recommended to sharpen it yourself. Always send it to professionals if possible.
I'm about to put a foot in these collards with my sharp knife.

Don't you usually hone a knife at a 20 degree angle? Also why only hone the top 2-3"?
