http://www.noreenskitchen.com Greetings! Lets use up the extra chicken that I roasted on Sunday night to make supper tonight! Tonight we are going to have chicken spaghetti that is inspired by a video I saw by heatherzblueeyez1975, here is a link to her channel:

So where Heather used fresh chicken and a little bit of a different application in her dish, I adapted it to suit my needs. I am using leftover chicken that I cut into medium sized chunks. I am also using a 1 pound bag of broccoli cuts, I would prefer to use broccoli florets, simply because the cuts contain too much of the stem pieces. But in an effort to really get serious on rotating my stock I am using what I had in the freezer. We all need to do that from time to time and this is the perfect time of the year to do it for myself.

So I simply sauteed some onion and garlic in a small amount of olive oil, added the broccoli which I had put in the microwave, in the bag, for about 3 minutes on 50% power just to get the "frozen" off of it. I let those mingle for a minute then added in the chicken and let the chill come off of that. Then I added about 3/4 of a bottle of Zesty Italian salad dressing that I had in the fridge that needed to get used. I let this simmer for about 5 minutes while the pasta finished up cooking.

When the pasta was done, I simply pulled it out of the water using a pasta fork and tossed it into the skilled with the chicken and broccoli. Mixed it up well and served it with some Parmesan cheese. Overall it was a wonderful use of the leftover chicken. The whole family enjoyed it.

I hope this gives you another great idea of how to use of your leftovers without feeling like you are eating the same old thing. If you plan ahead, you can make great meals that are easy on the budget!

  • @ThunderLardner Guy can come by my kitchen anytime! He is one of my faves! Spend nearly every Friday night with DDD on the TV! But since I'm not a diner and I'm not a drive in that must mean my kitchen is a dive! LOL : )

  • That looked really great! And I don't blame ya about going out in the dark in the garden w/just a flashlight..might be some critters waiting on ya or some unhibernated snake..yikes!! LOL

  • When I make a chicken spaghetti, I use alfredo sauce and broccoli. I have never thought of using Italian dressing. I do make a cold pasta salad in the summer that has frozen peas, green onions, red and green bell pepper, thin sliced carrots, black olives, cherry tomatoes or what ever fresh veg I have in the fridge etc. And maranated for a few hours in Italian dressing.

  • I make something similar, but I use the broc. caulif. and carrot mix (california mix) instead of just broccoli. I like the idea of using the salad dressing; adds a kick of flavor. I always just used garlic powder and other seasonings, so it could be a bit dry. I'm def. going to try this!

  • This is how I plan all of our meals. I menu plan a month ahead and only do 1 major grocery shopping trip so i know that if i cook such and such i will have leftovers to "makeover" but its very friendly to my pocket book
