That IS scrambled eggs, as known in France. It' usually rich and custardy.
I prefer english style scrambled eggs myself, when done well. French style albeit in quick version as Peel makes it is too rich for my liking. I can only eat a portion of it.
@zatoth13 Not sure what your beef is with him but he is a culinary icon as is his ex, Nancy Silverton. LA sucks for food. Campanile is one of maybe 5, real gourmet kitchens still operating in LA. Puck is a joke in comparison (having worked in almost every Puck kitchen in LA, I'm qualified to make that judgement). I went to cooking school over 15 years ago just to learn a few things as it is not my profession. This video was great!. It reminded me of why I love to create enjoyment through FOOD!..... I woke up early to cook breakfast for my wife....well...I used her favorite cheese instead of the recommended recipe.... We were both late for very work because of it!!.."how do you like your eggs Madame? scrambled or...?
