Clips from behind the scenes at a taiyaki shop in Nezu, in Tokyo's Bunkyo Ward. Early in the morning, the Hayashi brothers prepare the ingredients: batter and anko. The anko is made by mixing azuki beans and sugar in a gigantic vat. Later on, shopowner Nobuo Hayashi prepares each taiyaki by hand at an incredible speed. To learn more about the making of taiyaki, pick up a copy of the April 24 edition of Shukan ST at major bookstores or kiosks.
