During post rehab therapy/training I progressed this college athlete's single leg strength by doing single leg pistol squats (concentric only) off a stability disc. We slowly moved the elevation down and then got rid of the bar and performed pistols w/out any external weight. This particular athlete was not able to back squat (doctor's orders, ugh) and his season was quickly approaching so we worked prowler marches for hypertrophy and single leg variations to build strength & mobility. There are many ways to progress athletes strength obviously, but this way has done great for me and the athletes i've worked with.
