Grilled Dill Salmon, with Fresh Green beans & Carmalized Onions

what you will need:
2 fillets of salmon
1 cup fresh green beans (cut and in cold water)
1/2 cup diced yellow onion
1/2 tsp dried lemon zest
1/2 tsp dried oregano
1/2 tso dried dill
1/2 tsp chopped garlic
salt & pepper
butter
extra virgin olive oil

put spices and garlic together. Mix well, and rub on both sides of the salmon fillets. Set aside.

Heat up 2 tbsp EVoo and 1/2 tsp butter in a non stick skillet on medium heat. Add onions and sautee for around 5 mins or until clear.

Get your double boiler ready to steam the beans and place beans in to boiler and put on high heat. Then take the fillets that you have set aside and put them in the pan with the onions. Turn the heat down to low and cover. Cook for 5 mins on each side. Or until cooked.

After the 10 mins is up remove the beans and the salmon from the heat. In a seperate bowl put the beans, salt and pepper and 1 tbsp of butter, mix until butter is melted and then place the beans on the plates to be served. Do not drizzle left over butter (unless desired on to beans) then take the salmon fillets and place on to the beans, and then the onions (which should be nice and golden now) on to the salmon. You are now all done and ready to eat.

  • Yum, that looks delicious. I want to try that rub. Never tried samon...always ate tilapia. Will have to try this. I love cooking vids and would love to know more about what you cook. You have my vote for more cooking vids. :)
