GREAT RECIPE I MADE IT A FEW TIMES ALREADY, BUT I HAVE A ????? WHY DOES MY MIXTURE IS NOT CREAMY LIKE YOURS??? I USED THE SAME AMOUNT OF INGRIDIENTS : ( STILL TASTE GREAT BUT I WONDER WHAT IM DOING DIFFERENT!

If we make the sabayon instead do we need to put it in the refrigerator first before continuing?

@vassilischr Yes, if you are cooking the yolks and sugar as a sabayon it would be advisable to cool it in the fridge before proceeding. It doesn't need to be too cold, just room temp or below will suffice.

It could be various reasons, incl:
-not whisking sugar & yolks long enough
-different fat content & thickness in different brands of mascarpone
-not whisking combined cream & mascarpone stage long enough
-eggs are too cold, (room temperature is recommended)
Beyond the above it is hard to say what is causing the problem for you, as dairy & eggs are slightly different all over the world & from farm to farm.
Play with the recipe & make it your 'own' & find out what works best for your ingredients.
