Greetings! Yesterday my friend Katzcradul uploaded a very super fabuloso amazing stupendous video on how to can butter. In that video she refers to me as the "Pepper Queen" That made me think of this video that I made last August at the peak of pepper production in my garden. I was never able to upload this because of its length, but now I am able to, so here for your enjoyment, Canning pepper relish. Give this one a try when you are pulling peppers from your plot hand over fist and the neighbors are hiding from you in fear that you will extend your generosity just once too often.

  • I'm now inspired to try canning now. Due to my bad back I would never be able to handle the weight of moving around pressure cooker :( What can you can using the hot bath method? All veg's or just certain ones? thanks

  • @quiltcrazy1961 My best advice to you is to go and purchase a Ball Blue Book and/or the Ball Complete Book of Canning and Preserving. These two books will give you a great understanding of what you can and cannot waterbath can. You can do high acid foods with the water bath method.  I do pickles, pepper relish, corn relish, pickle or hot dog relish, all kinds of jams and fruit butters, tomatoes pickled green beans, anything that has a high acid content such as lemon juice or vinegar.   • I'm making some of these when my crop comes in just lovely. Could you just use pickling spice? Blessings!

  • @BexarPrepper OH Boy did it take me a while to get back to this! Sorry! You can use the pickling spice, but it does not have cloves in it. You can add what you like, I add celery seed cause we love it, I add the turmeric cause I like the color boost it gives the corn. I use regular pickling spice in my bread and butter pickles and add turmeric to them as well. I am going to be doing those once my picklers are out in the garden. I also do cauliflower and carrots and onions in the pickles.

  • I have a quick question. I usually try to buy the hot hoagie spread in the store. I want to start making it at home....How hot is your pepper relish? And does it make it sweet with all of that sugar in it? I didn't know how it would taste with just adding the vinegar and not the sugar. didn't know if that would be too much vinegar taste. (if you have ever been to a subway and got the hot pepper relish from there, that is exactly what i am trying to make) THANK YOU AND LOVE YOUR VIDEOS!!!

  • Noreen, I just wanted to say thank you for your videos! This is the first one I found of yours, and I have watched a whole bunch. This is my first year canning and your video really helped give me confidence in my own canning. And my family loved the pepper relish! HUGS!

  • Janable2000 the rack is needed to keep the jars off the direct heat which can either burn the contents in the bottom of the jars or even crack the jars while processing.

    She does some of the BEST YouTube canning videos. Like with going slow and telling you everything you will need as well as helpful hints.

  • I would like to try this. What the purpose for the wire rack in the pot? Is it needed?

  • Thanks for the reply. I'm down right now with lymphedema n cellulitis on top of everything else. But this will give me a chance to read the books. Hopefully when I get better I will be ready to!give canning a try. Love your vids. I have made your potatoe soup 6x now. So good! Thank you!
