In this video, Betty demonstrates how to make Peanut Butter Log Candy. This is a great finger food, if you are looking for something sweet to serve at a Super Bowl or other party.

Ingredients:

1 pound confectioner's sugar
4 ounces cream cheese, at room temperature
¼ cup butter, at room temperature
1 cup creamy peanut butter
1 cup chopped pecans, optional

In a large bowl, mix 4 ounces cream cheese and ¼ cup butter. Use an electric mixer to beat in 1 pound of confectioner's sugar, adding a little at a time. Roll out on waxed paper and form into a rectangle about ¼-inch to 3/8-inch thick. Spread evenly with 1 cup peanut butter. Roll into a log and trim ends. Roll in chopped pecans, if desired. Chill thoroughly before slicing into 3/8-inch slices. Place on a nice serving plate. Keep chilled until ready to serve, and put any remaining pieces of candy in the refrigerator to store. This is a delicious treat that is pretty, and almost everyone likes it! Enjoy! --Betty 

  • Love your videos. My grandmother used to make some candy similar to this but she called it Potato candy and used a potato. Have you heard of this and would they taste similar? Do you have a potato candy vid? Thanks!

  • I dont understand.. There is only # things to mix and I am screwing it up. The butter, cream cheese and sugar keeps comming out SOO sticky it wont come off the wax paper. I tried putting a bit of butter on the paper, and powedering the top to roll.. but I cant get it off the paper..HELP!!

  • @Rylos2187 If you will let it chill in the refrigerator, you won't have any problems.

  • Betty how do you store these and would they last outside of the fridge for several hours? Thanks for your help.

  • @KissHope Yes, they last outside the fridge for several hour, so there is no problem leaving them out to nibble on. To store them, however, I put them in a closed container and refrigerate overnight or freeze them for later.

  • Thanks for this recipe. My mother used to make it and I had forgotten how. One suggestion I'd like to make, Sprinkle powdered sugar on the wax paper before putting your cream cheese mixture on it. Also, if you chill the log before slicing, it will be much easier and pretty.

    I think all of KY is so proud of Betty and what she has accomplished, I love her channel. Will be making some of this at Christmas, just made a batch of Peanut Brittle again it is so good. I did experiment and added a little more baking soda, it gave it an even lighter/airy texture.

  • Betty, what if you sprinkled the pecans before you begin the rolling process? Wouldn't that eliminate soem of the difficulties? Thanks for your posts, which I enjoy very much.

  • This was a flash back to jr highschool in Greenup KY. Some of the cheerleaders and band members would make this and potato candy to sell for each orginazation's activities. This was really old fashion candy but very good.

  • My mother makes this around the holidays, about the same way you do it :) Except I havent tried it with the pecans, that its a good idea. This is my favorite candy hands down tho.

  • The Peanut Butter Roll is something my mom made when I was a small child and probably long before I was born. I am from Central PA. I gather we are about the same age so maybe you have heard this before. Back then it was made with mashed potatoes. I have used creme cheese for many years. This was always a Christmas Treat. One thing we do is make it into smaller rolls so the pieces aren't so big and color them with food coloring then rolled in powder sugar as a pie dough. SuperBowl colors, maybe?
