Super easy and quick dessert, so quick that you can make breakfast while they bake! :)
Pâte à Choux:
1/2 C butter
1 C water
1 C flour
1/4 t salt
4 eggs
Vanilla Custard Filling:
2 (136g) pkgs vanilla pudding mix
2 C heavy whipping cream
1 C milk
Preheat oven to 425, set the rack in the middle
In a large pot, bring the water and butter to a rolling boil. Stir in the salt and flour all at once until the mixture forms a ball. Transfer the dough to a large mixing bowl. Beat in the eggs one at a time (don 't worry if your dough begins to look as if it's curdled!), mix well after each. Drop by tablespoonsfuls (or use a pastry bag) onto an ungreased baking sheet. Lightly press down any tips that have formed on the dough (dip your fingers in water to make it easier)
Bake for 20-25 mins (MAKE SURE IT DOES NOT BURN!), until golden brown. The centre should be dry
When the puffs are cooled, you can fill it with a pastry bag, or cut the tops off and fill it.
Try different filling if you like, perhaps use a flavoured whip cream instead of custard. ORRR try a savoury version!
Dust some cocoa powder or powdered sugar and garnish with some mint.
If you want you can make a croque-en-bouche!

I've tried four separate recipes [all the same, though] and instructions on my attempt to make cream puffs... but everytime I make them, they don't turn out as 'puffs'. They turn out as soft.... pancake-like things... Do you have an idea why? :(

@LuminescentDanger Did you happen to open the oven while it was baking?? Cream puffs are really delicate and so I think any shift from the door closing or the rush of cool air will make them fall. What makes them rise is the steam from the water... Lol that's all the info I can give you, I am no pastry chef >_< Sorry!
