Hand Pulled Noodles

This was in my neighborhood noodle restaurant in Jiangyin, China. I've seen these little restaurants in all the places I've travled to in China. There were eveb two of them in a 3 block radius of my house.

This resaurant was run by a family from Gansu. The workers were kept rotating so new brothers, cousins, aunts or uncles were always coming and going.

Each person who ordered noodles would have them pulled fresh after they ordered. If you ordered noodles in a broth, the man would throw the noodles indo the pot out the window to cook as seen in the video.
