Let Jean from http://www.jeanscakes.ca show you how simple it is to bake these classic shortbread cookies for holiday parties and gift giving. Come to think of it these are great any time of the year.
Ingredients:
8 oz (1 cup) Cold unsalted butter, cut into ½-inch pieces
½ cup Granulated sugar
½ tsp Salt
10 oz (2 ¼ cups) All-purpose flour


Combine the butter, sugar and salt in large stand mixer bowl.
Mix on low speed until the butter combines with the sugar but isn't perfectly smooth, 1 -- 2 minutes.
Add the flour and mix on low speed, scraping the bowl frequently, until the dough has just about pulled together; don't overmix.
Roll out on a lightly floured surface, to about ¼ inch thickness.
Cut into bars or cut with cookie cutters and place on parchment-lined baking sheets. Prick surfaces with fork to avoid bubbling during baking.
Freeze until firm, at least 20 minutes.
Bake 40-50 minutes @ 275F until golden on the bottom and edges, and pale to golden on top.
