After getting the hang of paella and other Valencian rice dishes I am moving over to risotto. It's a great dish to make use of all of the seasonal foods we have here on the Mediterranean coast of Spain. I'm jealous of your video production but my kitchen is about a half meter bigger. I don't have a cat but if I ever get one I'm pretty sure I'd want to swing it; couldn't do that in your space--maybe in the living room.

Made this last night and it was delicious! It was a lot of risotto for two people, though. Can this be reduced, or would it keep the rice from cooking properly?

"basil herb risotto": bayzil 'erb riz oh toh - it drives me crazy!
