RECIPE:
Super fresh scallops are sauteed in butter w/ a touch of fresh lemongrass and a pinch of fresh tarragon. He adds a pinch of salt & pepper being careful not to over-season. The Asshole Chef gets color on the scallop, and is cautious not to not over-cook. Scallops are done when they loose their translucency and turn opaque. The middle should be slightly pink. Sets aside on a warm plate. He adds half-n-half (or cream) and butter, then reduces by a third. The Asshole Chef garnishes this quick and easy dish with a piece of fresh fennel.
