@memichayz There is something wrong with your logic. Just because I happen to be from the "states" doesn't discredit my knowledge of Thai cooking. I happen to be very proficient in Cambodian cuisine and I like to learn about how the Thai cook similar dishes. I learned how to make Pad Thai from a good friend of my mine who happens to be Thai...I just couldn't remember how to make the sauce.

Pad thai has as many variations as there are people making it. The version I learned from my Thai wife's mother includes Chinese chives, dried shrimp and sweet pickled turnips. Also, the noodles are the larger kind (sen lek), soaked for a few minutes in hot water to soften them before adding to wok.
