Any reason he couldn't have moved the sturrup out of the way while showing us how to do the Center Fire cinching?..It was very hard to see what he was doing.

I was expecting to see a mule or donkey used not a horse.Wouldn't it still need a crupper or breeching as they do not have a wither to speak of,and without one the saddle will still move forward.
