Harvest Salad

Serves 4
Dressing * 3 Tbs. walnut oil * 1 Tbs. coconut vinegar * ½ tsp. prepared mustard * 2 tsp. raw honey
Whisk by hand until all ingredients are emulsified
Salad * ½ bunch dandelion greens, torn or chopped into 2 inches segments * 1 head frisee, torn * pinch salt - to taste
Place above ingredients in a bowl.
Toss with salad dressing.
add: * 1 fuyu persimmon, quartered and sliced * 1 ripe pear, sliced lengthwise into thin strips
Gently incorporate into salad.
Serve on plates and top with remaining ingredients or top with remaining ingredients right in your salad bowl and then serve. * 6 Tbs. pomagranate seeds * 4 Tbs. walnut pieces

Oh! I forgot. I live in the UK so I can go out and pick the leaves from the common yellow dandelions and use them in my salads?
I have never seen them in shops.

Oh WOW! What a beautiful salad. I am going to try that!
My salads are usually boring with romain, cherry tomatoes, cucumber, avocado, a fruit i.e. apple, grapes or something else that I have available and then cashew nuts and dressed with a drizzle of olive oil, I also do add sprouts if I have any available.
