@solord I remember that battle! He even went out of his way to say of the challenger "This is 'Iron Chef" not 'Iron Sommelier!" It showed that he may have been a little over confident in his abilities and thats what cost him the battle!

Why is the french guy so cocky? He's not done anything creative. He's just replicated the La Tour d'Argent menu whereas IC Chen took the ingredient to heart and really ran with it.

They choose the Iron Chef days before the battle takes place and gives the Iron Chef and Challenger a long list of potential themes so that they can give a heads-up notice as to what ingredients are needed in the Kitchen Stadium.

That may be because if they did a battle Foie Gras, kitchen stadium would be swamped with protesters.
I love how the Iron Chefs (no matter how wonderful they are) always say, "I did my best." I can only imagine the American version has chefs "talking smack" to each other after seeing the Bobby Flay episode.
