The downsides though.. apparently when locked you can get the bike out by deflating the front tire. Also, I have heard several stories of the bike coming out of these mounts.

looks like the racheting arm runs into the v-brakes or even the forks that are disk set up.

Could be done, but might be difficult. Instead take a look at the line of Thule Hitch Mount Bike Racks which are designed to attached directly to a hitch receiver. Check out the Thule T2, which mounts to both 2 inch and 1 1/4 inch receivers.
