2 c. sugar
1 T. butter
4 ½ c. grated, fresh coconut (2 coconuts makes about 4-5 cup. I would buy 3 if in the states, preferably at an Asian store. Most of the time, at least one coconut has spoiled).

EEEEEEEKKKKKSSS!! I see where I made the mistake in this video. Use 2 cups of sugar (not 2.5). I reviewed my written recipe and saw the mistake. I AM SO VERY SORRY!

@Tamsam41 and NeneRaughton......Did you guys use fresh coconut.....or the dried coconut? If you used the dried coconut, it is devoid of the fat and moisture in fresh coconut. I never use a candy thermometer when I make this. I simply melt the sugar till it is all practically liquified, add the butter then put the coconut in.....just as in the video. It has never gone hard on me. Please do let me know!

I tried to make this recipe but my candy hardened so much that no one could eat it...Did I get it to a temperature that I shouldn't? I'm sure it would have been a good recipe :-)

Hafa Adai! I did not realize my project was also on YouTube! Some people add cocoa powder.....but I've never tried it. A delectable alternative might be to dip the finished candy in tempered chocolate....sounds quite sweet though!
