「鮪の平造り」と「寿司ネタ切り」 柳刃包丁の動きです。
筋を断ち切っていく様子が見れます。
最終、ネタ切りから寿司を握る動作までを収録。

This video shows the movement of yanagiba for hirazukuri and sushi netagiri. Maguro (tuna) is used to demonstrate in this video.

You can see how smoothly and cleanly the yanagiba cuts through tendons.

At the end of the video, there is a brief demo of Ueda-san performing sushi netagiri and making sushi.

He uses a Suisin INOX Honyaki Yanagiba in this video..
