@KnockoffNigeI: You may have mistaken the parting tool for a mortice chisel. It's thick like a mortice chisel but has a bevel on both sides of the blade, so that it resembles a V at the tip. That's why he talks about "the other bevel" in that section.

This is just what I needed - thanks very much. While the background music is superfluous I didn't find it particularly annoying and I could still hear the instructions ok.

awh don't give him a hard time on the music, this is like the most helpful thing I've seen for my sharpening needs.
I can hardly hear the description with the loud, stupid background music.
