    thanks for watching - and I'm glad you liked the video! I thought Chef Robert did an excellent job, and his food was so good! FYI, I just filmed another with him which will be posted in March. He demonstrates how to make hush puppies and fried catfish - the best I've ever had. Can't wait to share it. =)

    This looks incredible (especially with that beautiful ham hock). We're curious though, because one of our resolutions is to eat less meat this year-- is there a way to keep the flavor but lose the meat? Or should this be one of those dishes that we just go whole hog on (pun intended) and use the ham hock?

    from Robert [part 2 of 2 due to character restrictions]: …Some stores with cheese counters will sell them as well. It is usually easier to just save them your self. Other options would be to simply cut the amount of meat used in half, Some people will use smoked turkey in place of pork.
