What if we don't have one of those fancy looking mixer things? I'm 15 and I've only just started taking an interest in cooking. It's my mum's birthday soon and I would love to make some cheesecake for her- it's her favourite!

@NinaNarnia Hi! Thanks so much for watching. Cheesecakes can be tricky to make. You can use a regular hand mixer to mix the ingredients.. try mixing rather than whipping the ingredients to prevent extra air from being incorporated into the filling. Also use softened cream cheese. Cheesecakes also need to be baked slowly. Steam baths work great to keep the temperature uniform. Try not to overbake. If you do have cracks, they can be hidden/covered with fruit/toppings! Good Luck!

@Fikisko Hi. This is an excellent question. Cheesecakes are really delicate and are prone to cracking. A water bath (steam) surrounds and protects the cheesecake from direct heat, allowing it to be prepared slowly and evenly. Extreme temperature changes can crack the cheesecake, so it should be cooled slowly as well. Turning off the oven and leaving the door shut lets it finish baking and cool down gradually.
