mmmm...I love posole...my wife made it for my kids 11th birthday party and everyone loved it....she uses both pork and chicken in it......

my Mexican friend uses these really dark big chilies, not sure what kind, and she cooks them slightly on the stove top. and i think it makes the stew redder
