I've never made wine before, and I have a Carboy with a valve on the bottom (like those big orange Gatorade jugs)...is this simply for cleaning or is there another method??

potassium metabisulfite is basically a preservative. Keeps your wine from oxzidizing and keeps microbes from growing. Depending where the pH of the wine is of coarse.

At what point in the process do winemakers age in an oak barrel. (Has fermentation been stopped and the yeast killed at that point?)

Thanks. There are different ways to age in an oak barrel. I think many people start primary fermentation in oak and continue to let it sit for 3-6 months before racking in to carboys, cleaning out the barrel and then reracking back into the barrel. I would suggest letting it finish first in carboys and then racking into a barrel and tasting occasionally to see what how much oak flavor you enjoy and then bottling.
