Firstly Bob Hoover never rolled a 747. He rolled a Shrike Commander.. Tex Johnson performed a barrel roll in a 707, but haven't heard of any 747's doing them. They are 1G though, and should be safe (unless you mess up royally).
That being said, this would be a loop, not a barrel roll. And a loop needs a lot of excess airspeed/thrust to work, a lot of altitude probably (especially in a 747/767) AND imposes enough g's to pose a danger to the airframe. So its pretty obvious this is a joke.

UUUUUUMJMKDMMMMMMMMM, No they don't. USAF never counts as passengers. The military can do whatever they want. Kinda like a FAA rule for skydiver's that says you can't take off and fly more than 2 miles and let jumpers out. Well, I've seen the ARMY fly 70 miles and let jumpers out. Don't compare Soldier's that have a contract to die at any given moment, to paying customer's/civilians with kids on board a Delta airline. Bad respond.

747's have been know to preform barrel rolls before, but definately without passengers. and yes he flipped the camera because if the plane did a barrel roll, the ground would be coming at the camera rather than rolling itself. and his finger kinda gives it away.
