what's the sauce made from?..i've been making Ma La Do fu (same as Ma Po To Fu) basically, but the best flavor is when I use the ready-to-go ingredients/sauce from the supermarket. Still, i'd love to be able to make the ingredients my own.. thanks in advance for the info.. :)

Mapo Tofu is my favorite Chinese Dish
Chef Cheng did an excellent job of educating the public about the sophistication and complexity of Sichuan cooking. I believe there are many who assume that Chinese cooking is just stir fry with soy sauce.
