@NiHuWi Actually, the new story said nothing about his parents, he could still be Chinese-American. All the Vignette said was they were abducted as children. In the original story, they were abducted by their own father and he want back to China with them, as he was a Lin Kuei agent in the United States. Theres a high chance he still is American-Chinese. Also, look at his mk3 cotsume in game, still looks white.

@Archzenom That's been retconned for the new games. Sub-Zero is officially full Chinese now. He was originally made biracial to account for the fact that a white actor played him in MK3.
