there are two ways
the first way is when the song is with flair. when the song is ending with forte or fortissimo.
on those occasion at the final note you can just life up your bow.
after you lift up the bow you have to hold it for couple of seconds. after that you can put down the bow and it will show that the piece is over.

the second way is when the piece is peaceful and quiet. on such pieces the song often ends with very quiet note, like piano or pianissimo. during these ending you don't need to do the motion of lifting up the bow instead you can just wait with the bow stopped.
at this position you can wait a couple of seconds then put down the bow.
