Ingredients:
4 pieces boneless chicken leg & thigh, cut into parts
2 tbsp. curry powder
1 tsp. turmeric powder
1 tsp. onion powder
1 tbsp. brown sugar
5 tbsp. Jufran Thai Fish Sauce
1/2 cup instant coconut milk
1/2 tsp. white pepper
cornstarch for dredging
Golden Fiesta Cooking Oil
For the Mango Salad:
2 pieces green mango, shredded
3 tbsp. Cilantro (wansoy) leaves & stems, chopped
3 pieces shallots, sliced
2 tbsp. calamansi juice
3 tbsp. brown sugar
1/2 tsp. red bell pepper, finely chopped
4 tbsp. Jufran Thai Fish Sauce
1/4 piece sili labuyo, chopped
Procedure:
1. Marinate chicken in curry powder, turmeric powder, onion powder, brown sugar, Jufran Thai Fish Sauce, coconut milk and white pepper for at least 6 hours.
2. Dredge in cornstarch and deep fry in Golden Fiesta Cooking Oil.
3. Meanwhile, make mango salad by mixing all ingredients together.
