The ultimate? That's a bit strong. I think Ken from street fighter and Misturugi from soulcalibur 4 would have something to say about that.

It depends on what level of play you're talking about. At low levels of play, Hakumen's very noob friendly, because his C attacks have good range, high damage, and amazing priority. You can pretty much spam C at low-levels and have a fair amount of success.
BUT! At the level of play contained in this video, from what I understand, Hakumen is towards the lower end of the tiers, so he actually takes more skill to use effectively than the others.

counters are made to only be useful to players with good timing, not those who use counters all day and forget the other moves, and the benefit of a successful counter is an extra magatama(a bar for hakumens special moves) so hakumens counters are only good for players with good timing and know how to combo with hakumen.
Haku-men=not exactly the first character to call "noob friendly"

One of the best uses of Haku-Men's drive is to set up for his distortion drive, so much damage.
Jin may be easy for noobs to pick up at first, but it takes a lot of work to really be skilled with him, just like any other character.

"noob characters" are easy to be good with but not easy to master, that jin is waaaaayyyyy above good
