@Brook61. Thanks for taking the time to post this. I've made allot of ciabatta in that past couple of years. I use one of the quick methods I modified a bit. I'm now looking to do a more traditional type ciabatta. Thanks.

You added tooo much flour on the dough. The dough should be very light and airy inside...

@merdadecadastro I think a better version would be to use an 18 hour starter, then mix the rest of the ingredients, good idea. It's not rocket science, but sometimes baking feels like it!

@DRUMKIND I make it harder than it should be, maybe try a "no-knead" bread, you'll be happy. More and more videos are popping up on bread making, look for an easy one, ciabatta is not easy to make.

@LordOmberus I am using 8% protein "Better For Bread" flour, haven't had good results with Caputo (10-12%) or Atlas ADM (14-15%)
