Fabuloso! additional info: perhaps it should have been mentioned that the plantain peel will stain - reason for the glove. and you want them crispy because they are the delicious caribbean version of the french fry... so final step is to salt them. and there are 1001 tasty dipping sauces for them. where is my Daiquiri !?!

When you eat it with rice and beans, put the rice and beans on top. It's really tasty with a nice crunch! :)
