Matcha is renown as an absolute delicacy amongst Japanese green teas, produced from the same tea bushes as Gyokuro but differing in the processing of the leaves. The sprouting tea bush is covered and grown in shade for more than 20 days. The freshly picked tea leaves are steamed and dried without rolling. Later, stalks and veins are removed and only the remaining soft leaf tissue is ground into a fine powder, Matcha, by a stone mill.

The taste of this speciality amongst teas is exquisitely rich and creamy, with hardly any bitterness at all.

It is also extremely good for you. In the powdered form (Matcha) the tea is not just a brewed extract, but the whole leaf is consumed and so all components are absorbed and giving the full effect. All non-water soluble constituents like clorophyll, vitamin A and E, beta-carotine, minerals, proteins, food-fibers etc. are consumed and absorbed (on top of all the water soluble ones that we get from steeped tea leaves).

It comes from the heart of Japanese tea culture, Uji, manufactered by a company that was founded in late 17th century and today ranks amongst the foremost producers of fine teas in Japan. Preparation guidelines for Matcha:

Use 1 scoop/1 leveled tsp per cup (100 - 150 ml)

Add water at 70°C-75°C and whisk with Chasen (traditional Japanese bamboo whisk) until a fine froth develops.

It may take some practice to prepare a nice frothy cup, but even while you're on the way up to perfection the tea will taste delicious.

  • Brown Matcha indicates a low quality. High quality Matcha has a vibrant green colour as you can see in the video. The Chasen (whisk) is essential to get a nice thick froth, but doesn't influence the colour. There are many grades of Matcha and the differences are vast. Check the link in the video to learn more about our Matcha, it really is exceptional.
