We have been sourcing mozzarella from the "legendary" Joe's Dairy in Manhattan for years. Joe's Dairy put hand-pulled fresh mozzarella on the map in New York City. Under the direction of Joe's Dairy, Avanelle Rivera now has us producing old fashioned, hand-pulled mozzarella in our stores. It has become another Fairway staple.
The difference between our product and other stores' machine-made mozzarella is extraordinary. If it were not, we wouldn't go through the grueling production process you see in the video. For a real treat try the salted version. I take a few pieces home every week.
